Lately while looking for new recipes on Pinterest and Foodgawker I’ve noticed a lot of ethnic recipes that sound so very yummy! Not one to shy away from a challenge, periodically, I send my husband off to the grocery store for the ingredients for some new menu items. Yes, my lovely husband grocery shops for us! It all started when I was working retail which required me to be in the stores Saturday and Sunday. Since I’m retired I go occasionally, however he complains that I buy more than what is on the list! J We did happen to have all the ingredients for these next two recipes!
Now on the menu – twice so far, is Korean Beef with Coconut Rice. I stick to this recipe for the Korean beef however, I use half coconut milk/half water when cooking the basmati rice and it is soooooo good! It makes a lot for the two of us so ends up being a great lunch for one of us the next day.
Chicken Satay was the go-to menu when wanting something different to do with the chicken breast tenders we had. I made this satay sauce to brush on the chicken before Tony grilled it and then used it as a dipping sauce. There was nothing left – so it was delicious! Some good things about this recipe are that it doesn’t require tamarind sauce and it is super easy. I used natural smooth peanut butter and it was perfect.
